Authentic RussianBorondinski Bread
Price: $18 per loaf
An authentic Russian Borodinski rye bread crafted through a traditional two-day process using a scald, sponge, and final dough.
This deeply aromatic loaf is made with fermented rye malt and rye malt barley to achieve its signature dark color and complex, toasted-cereal flavor. Crushed and whole coriander seeds are layered throughout, providing warm, slightly citrusy spice that defines true Borodinski.
Molasses adds gentle sweetness, while slow fermentation produces a dense yet moist crumb and a softly caramelized crust. This is a bold, deeply flavorful rye meant to be sliced thin and savored.
Traditional Two-Day Process
Day One begins with a rye scald, where hot water is combined with rye flour and malt to unlock sweetness, aroma, and natural sugars. The scald is cooled and incorporated into a sourdough sponge,
allowing flavors to deepen slowly overnight.
Day Two includes final dough preparation, where the matured sponge is mixed with additional rye flour, molasses, salt, and coriander before shaping and proofing. The bread is baked slowly to fully set the crumb and develop its characteristic aroma and color. Due to this extended process, Borodinski is produced only in small batches.

Borodinski is a historic Russian rye bread traditionally associated with long fermentation, malted grains, and coriander. Its flavor profile and preparation method distinguish it from lighter rye breads and reflect centuries of Eastern European baking tradition.
